Breadfruit Leaf
Artocarpus altilis
Breadfruit leaf (Artocarpus altilis) grows on a large tree that bleeds a white latex. The leaves reach a metre in length, cut deeply into three to nine lobes and rough to the touch underneath, with yellow stipules that soon drop. Native to Malaysia, the tree was brought into the southern provinces of Vietnam and is grown in An Giang for its fruit, a green, head-sized cluster whose white flesh is starchy rather than sweet and is boiled, baked, cooked in soup, or milled into a flour used like potato flour for pancakes and cakes. The leaves are gathered all year round.
