Apium graveolens

Celery (Apium graveolens) is a perennial herb whose upright, smooth, grooved stem can reach a metre and a half, branching upward. The lower leaves are stalked and cut into three lobes, the upper ones stalkless, and the small off-white flowers stand in umbels. Native to Europe, it reached Vietnam only recently and is now widely grown here as a vegetable, cooked into soups; the whole plant is also chopped and simmered into a drink, fresh or dried. The celery smell comes from two compounds of the oil distilled from its fruit, sedanolide and sedanonic anhydride.
