Pandanus amaryllifolius

Pandan (Pandanus amaryllifolius) is a screwpine, a perennial that tolerates shade well, spreads by suckers and throws out aerial roots along a sprawling stem, its long strap-shaped leaves keeled and greyish beneath. It is the only pandan with scented leaves, an ancient cultigen never found in the wild, kept in home gardens in Vietnam, Thailand, Malaysia, Indonesia, the Philippines and Sri Lanka. Leaves are cut one at a time, three or four left at the crown, and used fresh: dropped into the pot to scent ordinary rice in place of costly aromatic varieties, pressed for juice that flavours and colours cakes and jellies, or wrapped around chicken before frying.
