Dried Pomelo Peel
Citrus maxima
The pomelo (Citrus maxima) is a big citrus tree of 10 to 13 metres, its branches spined, its oval leaves leathery and broadly winged at the stalk, its fruit round and sometimes as large as a man's head under a thick rind whose colour varies with the variety. Pomelo is grown all over Vietnam, most famously at Đoan Hùng in Phú Thọ, and fruits from August to November. The rind is kept once the flesh has been eaten, dried, and simmered in water. It is an aromatic part of the fruit: its oil runs to about 26% citral and esters, and the rind also holds pectin and naringin.
