Lotus Seed
Nelumbo nucifera
Lotus seed, hạt sen or liên nhục, is the kernel of Nelumbo nucifera, a water plant rooted in pond mud whose shield-shaped leaves, 60 to 70 centimetres across, rise clear of the water beside large white or pink flowers. After flowering, the carpels ripen in a flared, upturned receptacle, the gương sen, each fruit holding a single seed with no endosperm and two thick cotyledons. Folded inside is the plumule, tâm sen, which is drawn out separately. Lotus is grown in many parts of Vietnam, to eat as much as for herbal use, and gathered from July to September.
