Mulberry Fruit
Morus alba
Mulberry fruit, tang thầm, is the berry of Morus alba, a tree that can reach 15 metres but is usually kept to two or three by constant leaf picking. Its alternate leaves are oval or three-lobed and coarsely toothed, with three clear veins spreading from the stalk. Male and female flowers grow on separate trees, and the female catkins swell into a juicy compound fruit, red at first and then near-black. Chinese in origin and long established in Vietnam, the tree is now grown all over the country to feed silkworms. The ripe fruit is edible, sweet with glucose and fructose and tart with malic and succinic acids.
