Oolong Tea
Camellia sinensis
Oolong is made from Camellia sinensis, a vigorous evergreen that, left uncut, can grow into a tree of ten metres or more with a trunk too thick to get your arms around, but which is pruned to about two metres on plantations to keep the picking within reach. Its white flowers are strongly scented. Vietnam grows tea in Phú Thọ, Tuyên Quang, Hà Giang and Thái Nguyên, and in the south in Lâm Đồng, Đắk Lắk and Quảng Nam. Buds and young leaves are picked in spring and rolled, then dried; black and chè mạn teas are instead left to ferment before drying.
