Roasted Sophora Bud
Styphnolobium japonicum
Roasted sophora buds begin as the unopened flowers of Styphnolobium japonicum, a long-lived tree of the pea family reaching six to ten metres, with alternate pinnate leaves of up to seventeen leaflets and small bright yellow flowers massed in sprays at the branch tips. The tree is planted across Vietnam, most heavily in Thái Bình, Bắc Giang, Thanh Hóa, Nghệ An and Hà Tĩnh. The sprays are snapped off in summer while the buds are still shut, dried fast in the sun or under gentle heat, then finished in a dry pan. The buds are yellow-green, faintly scented and a little bitter.
