Soapberry
Sapindus mukorossi
Soapberry, bồ hòn, is the fruit of Sapindus mukorossi, a big tree reaching 20 to 30 metres, with pinnate leaves and panicles of small flowers at the branch tips. The fruit ripens in October and November as a single round drupe, its wrinkled skin pale yellow-brown over one black, spherical seed. The flesh holds about 18 per cent saponin, and the French name for the tree is savonnier, the soap tree. It is grown across the northern provinces of Vietnam, from Cao Bằng and Lạng Sơn to Phú Thọ and Tuyên Quang. Picked fruit is kept whole, or stoned and threaded onto bamboo to dry.
