Stevia Extract
Stevia rebaudiana
Stevia (Stevia rebaudiana), the Paraguayan sweet herb known there and in Argentina as kaahee, is a member of the daisy family whose leaves taste intensely sweet. In 1931 Bridel and Lavielle drew from the leaves about six per cent of a glucoside they named stevioside; hydrolysed, it gives steviol and isosteviol, and it is some three hundred times sweeter than cane sugar. A kilogram of the plant holds 12 to 15 grams of it. Like most of the intense sweeteners, it carries a faintly bitter aftertaste.
