Asparagus Root
Asparagus cochinchinensis
Asparagus root (Asparagus cochinchinensis) comes from a long-lived climbing plant whose three-angled, needle-like shoots stand in for leaves, the true leaves being reduced to scales, and which carries small white flowers in summer and red berries. Underground it makes a cluster of plump, spindle-shaped tuberous roots. It grows wild and is cultivated all over Vietnam, most of all in Cao Bằng, Lạng Sơn, Thanh Hoá, Bắc Thái and Nam Hà; planting is in February and March, lifting in September and October. The roots are softened in water or steamed, cored, sliced thin and dried. They taste sweet at first, then faintly bitter.
