Ilex kaushue
Bitter tea (Ilex kaushue) is a holly of the limestone hills, growing in Cao Bằng province in Vietnam's far north and scattered through a few other localities; Vietnamese botanists settled the species name, while the leaf has long been known as chè đắng, chè khôm or khổ đinh trà. In southern China the same kind of drink is made from a related species, Ilex kudincha, used there as a drink and a medicine for some two thousand years. The leaves are the part picked, and they are steeped in hot water and drunk daily. Chè đắng and khổ đinh trà both name the taste: the cup is bitter.
