Cibotium barometz
Cibotium (Cibotium barometz) is a large fern growing as tall as two and a half metres, its fronds up to two metres long and scaled in shiny gold. The rhizome is wrapped in golden hair and resembles a small animal so closely that sixteenth- and seventeenth-century Europeans took it for one, the Scythian lamb; the Vietnamese name, cẩu tích, likens the unsliced piece to a dog's back. The fern grows wild in the mountain forests of Vietnam, Laos, Cambodia, Malaysia, Indonesia, the Philippines and southern China. The rhizome is lifted year-round, best in late autumn, cleaned of rootlets, stalks and hair, sliced thin and dried, sometimes steamed first.
