Dahurian Angelica
Angelica dahurica
Bạch chỉ (Angelica dahurica) is a perennial of the carrot family one to one and a half metres tall, its hollow stem purple-pink and smooth below. The large lower leaves are cut two or three times into toothed, oval segments, and the leaf stalks widen into sheaths that clasp the stem; white flowers open in compound umbels. Introduced to Vietnam, it grows well on the plains and in the cool high mountains, though seed sets only in the cold uplands. The root is the part sold: lifted in autumn as the leaves yellow, sometimes shut a week in a lime-lined jar, then dried and scraped free of its thin skin.
