Alisma plantago-aquatica
Water plantain (Alisma plantago-aquatica) is an aquatic herb of ponds and paddy fields, standing 0.3 to 1 metre tall, its oval to lance-shaped leaves rising from the base beneath umbels of white or faintly pink flowers, each flower with three green sepals. It grows wild in damp ground in Lào Cai, Lai Châu, Cao Bằng and Lạng Sơn, and is now cultivated in Nam Hà, Thái Bình, Hà Tây and Hòa Bình. The part taken is the white rhizome, rounded or shaped like a spinning top: lifted, washed, scraped clean of its fine rootlets, then dried in the sun or a kiln.
