Bamboo Leaf Powder

Bamboo leaf here comes from tre gai (Bambusa arundinacea var. spinosa), a very large thorny bamboo of the grass family that forms dense clumps and reaches 35 metres. Indian in origin, it is widely planted as hedging around Vietnamese villages and household gardens, and is also met with growing wild. The leaves are narrow, one to one and a half centimetres across, and the same colour on both faces; they are usually used fresh. Two other parts are also collected: pale shavings scraped from under the green skin of the culm, and the sap wrung from young canes after roasting. The leaf tastes bitter.
