Artocarpus altilis
Breadfruit (Artocarpus altilis) is a large tree with white latex, native to Malaysia and introduced into the southern provinces of Vietnam, An Giang among them, where it is grown for its fruit. Its leaves are the striking feature: up to a metre long, cut deeply into three to nine lobes and very rough on the underside, with yellow stipules that drop early. They are gathered year round and used fresh. The tree's globular compound fruit, green to yellowish and the size of a human head, holds a white flesh that is starchy rather than sweet – boiled, roasted, or milled to a flour and worked into pancakes and cakes.
