Celery Powder
Apium graveolens
Celery (Apium graveolens) is a perennial herb of the carrot family, its ridged, upright stem reaching about a metre and a half and branching into deeply cut, three-lobed leaves and umbels of small, pale white flowers. Native to Europe, it was introduced to Vietnam relatively recently and is now widely grown here as a kitchen vegetable. The whole plant is cut up and dried in the sun or in a drier, then simmered into a drink; in Europe the swollen root is the part more often used. Every part is aromatic, and the fruit yields a colourless, very fluid oil carrying celery's characteristic scent.
