Cynara scolymus
The artichoke (Cynara scolymus) is a tall, thistle-like plant of the daisy family, reaching nearly a metre or more, sometimes over two, with stems and deeply cut, spiny leaves covered in white woolly down and flower heads of a pale purple. Introduced to Vietnam, it is grown chiefly at Đà Lạt, Sa Pa and Tam Đảo, though it will take in the lowlands too. The fleshy base of the bracts and the flower base are eaten; for drying, the leaves are cut when the plant is about to flower or in flower, the midrib stripped out, and the blades sun- or heat-dried. The leaf holds a bitter compound, cynarin.
