Musa
The banana (Musa) is not a tree but a tree-like perennial herb, two to nine metres tall, growing from a short underground corm whose buds throw up the suckers that replace it: once the bunch has been cut, the mother plant is cut down too and suckers take over. South-East Asia holds the greatest diversity of Musa and is the recognised centre of origin of bananas and plantains; in Vietnamese the plant is chuối. Plantains and cooking bananas are cooked green or just after ripening — boiled whole, roasted in hot ashes, or peeled, sliced and fried — and are also dried, or made into chips and flour.
