White Dragon Fruit Powder
Hylocereus undatus
White dragon fruit comes from Hylocereus undatus, a climbing cactus whose green stems trail up to ten metres, three-sided and scalloped along the edges, horny and spiny along the margins, gripping whatever they climb by aerial roots. Native to the belt running from Mexico to Colombia, it is grown in Vietnam, trained up large trees and walls for its fruit. The flowers are white to pale yellow and open as much as thirty centimetres across. The fruit is reddish and juicy, roughly twelve centimetres across, keeping the flower's scales on its skin; the white flesh is flecked with small black seeds and tastes sweet and mild.
