Benincasa hispida
Winter melon (Benincasa hispida) is an annual climbing vine reaching up to five metres, shaggy with long hairs, its heart-shaped leaves cut into five lobes and its tendrils branched. Yellow male and female flowers give way to a long, oblong fruit of three to five kilograms, bristly while young, its greyish-green skin taking on a waxy bloom as it matures. It came originally from India and is now grown widely, Vietnam included, as a vegetable. The ripe fruit is picked for its flesh, skin and flat seeds, boiled, stir-fried or simmered in soup, and also candied. The flesh tastes sweet.
