Bixa orellana

Annatto seed comes from Bixa orellana, a small tree of four to five metres with soft, smooth, three-cornered leaves and large purple or white flowers in short sprays at the branch tips. Its round purplish-red pods, covered in soft bristles, split into two valves packed with seed, and each seed is wrapped in a short red coat. Native to tropical America, the tree is grown by households in Vietnam, Laos and Cambodia for colour: the seed is dropped into very hot water, stirred hard and rubbed through a sieve to strip that coat, which holds four to five per cent carotenoids, chiefly the bright red bixin, with the yellow orelin.
