Cassia cinnamon comes from Cinnamomum cassia, an evergreen tree native to southern China and grown across Southeast Asia, including Vietnam. The bark is stripped from the trunk and branches, then dried until it curls into sticks or is ground to a fine powder. Its scent is sharp and woody, with a bold, sweet-spicy bite on the tongue. Cooks add the whole sticks to braises, curries and mulled drinks, or steep them in tea, while the ground bark flavours baked goods and spice blends.
