Clove
Syzygium aromaticum
Clove is the dried, unopened flower bud of Syzygium aromaticum, an evergreen tree in the myrtle family native to Indonesia's Maluku Islands and now grown in other tropical regions such as Madagascar, Zanzibar and Sri Lanka. The buds are hand-picked while still red, then sun-dried until dark brown and hard. Whole or ground, cloves flavour braises, marinades, pickling brines, mulled drinks and baked goods, giving an intense, sweet-spicy aroma and a sharp, peppery bite on the tongue.
