Dill Seed
Anethum graveolens
Dill (Anethum graveolens) is a slender annual herb, 0.3-1m tall, with a smooth, barely branched stem and leaves cut three times over into thread-like segments that are fragrant when bruised, though not to everyone's liking. Pale yellow flowers open in broad umbels, each setting an oval fruit about 3mm long, flat-backed and ribbed, parting easily into two halves. Dill grows all over Vietnam, but mainly for its leaves, cooked with fish; the fruit, sun-dried after picking, has more often been raised for that purpose in Central Asia and Europe. In Vietnam the dried fruit is now used to scent tea; it holds 3-4% essential oil, mostly carvone.
