Dried Tangerine Peel
Citrus reticulata
Dried tangerine peel, trần bì, comes from the mandarin (Citrus deliciosa), a small citrus tree with alternate, finely toothed leaves and white flowers borne singly in the leaf axils. Its fruit is round and flattened at both ends, orange to reddish-yellow, with a thin, easily lifted rind. The rind makes up about a fifth of the fruit and carries 3.8% essential oil when fresh, mostly limonene, with the 1% of methyl anthranilate behind its particular scent. Peeled and dried, it is stored, and the older peel is the more prized. Mandarins are grown all over Vietnam, most heavily in Nghệ An, Hà Tĩnh, Quảng Bình and Quảng Trị.
