Fennel Seed
Foeniculum vulgare
Fennel (Foeniculum vulgare) is a small herb of the umbellifer family whose leaves are cut into fine threads, so that at a glance the plant looks much like dill. Crushed, the whole plant smells of star anise, and the same note carries into the part that is harvested: a fruit no bigger than a grain of rice, holding 3-12% essential oil that is 50-70% anethole, with smaller amounts of estragole, methyleugenol, anisic aldehyde and camphene. In Vietnam it is a comparatively recent introduction rather than a long-established crop.
