Allium sativum

Garlic (Allium sativum) is a bulb-forming plant of the onion family, and the bulb is the part used, the one Vietnamese cooks keep to hand as a seasoning. Its smell is not there ready-made. The bulb holds alliin, an odourless amino acid, and only when alliin meets alliinase, an enzyme present in the same bulb, does allicin form: a colourless oil that carries the smell and taste that read as garlic. A hundred kilos of garlic yields roughly sixty to two hundred grams of essential oil, with a trace of iodine besides.
