Ginger
Zingiber officinale
Ginger (Zingiber officinale) is a tender, herbaceous perennial in the ginger family, native to the tropical forests of Southeast Asia and also grown across Vietnam. The plant is valued for its underground stem, or rhizome, commonly sold as the root and used fresh, dried, or ground. Sliced or grated into stir-fries, soups, and curries, or steeped whole in tea, it gives off a bold, spicy, faintly lemony aroma and a bright, biting taste that turns sharper and more fibrous as the plant matures.
