Piper nigrum
Green pepper is the unripe fruit of Piper nigrum, a climbing vine that grips its support with roots and bears leaves like betel, though longer, with catkin-like fruiting spikes hanging opposite them, twenty to thirty berries apiece. The berries are green at first, turning red and then yellow as they ripen, and green pepper is taken at that early stage, while the berries are still green. The skin and the fruit wall beneath hold the vine's essential oil and its chavicine, the compound behind pepper's sharp bite. The vine is grown across southern Vietnam, most heavily around Châu Đốc, Hà Tiên, Phú Quốc, Bà Rịa and Quảng Trị.
