Hyacinth Bean
Lablab purpureus
Hyacinth bean (Lablab purpureus) is a climbing vine that reaches five metres and lives one to three years, with angled, sparsely hairy stems, alternate leaves of three ovate leaflets, and white or pale purple flowers in sprays. It pods mainly in autumn and winter, and is grown widely in Vietnam, including the delta provinces of Tiền Giang, Bến Tre, Hậu Giang, An Giang and Kiên Giang, the young pods eaten as a vegetable. It is the mature seed that is kept: a flat ivory oval 8 to 15mm long with a raised white scar along one edge, shelled in dry weather, dried, then toasted golden before use.
