Local Ginger
Zingiber officinale
Local ginger (Zingiber officinale), gừng sẻ in Vietnamese, is a perennial standing sixty centimetres to a metre tall, its narrow, stalkless, sheathing leaves fragrant when bruised and its underground rhizome swelling into a tuber that grows fibrous with age; cultivated plants rarely flower. Ginger is grown all over Vietnam, for the kitchen and for export. Rhizomes lifted in summer and autumn are used fresh, the leaves and rootlets trimmed away and the rhizome simply washed; older rhizomes dug in winter are cleaned and dried in the sun, some with the skin left on, some scraped bare first. The flesh is aromatic and sharply pungent.
