Saigon Cinnamon (Cassia) Bark Extract
Cinnamomum loureiroi
Saigon cinnamon, or Vietnamese cassia, is the dried inner bark of Cinnamomum loureiroi, an evergreen tree native to Southeast Asia and grown in Vietnam, particularly Quảng Ngãi province. Harvesters peel the bark from young branches and dry it until it curls into quills, used whole or ground to powder. The bark has an intense, sweet-spicy smell and a sharp, pungent bite on the tongue. Vietnamese cooks simmer it in broths, including the beef broth for phở, and grind it into baking spices and spice blends.
