White Pepper
Piper nigrum
White pepper (Piper nigrum) is the ripe fruit of a climbing vine that grips its support with clinging roots, carrying betel-like leaves and drooping spikes of twenty or thirty berries that ripen from green through red to yellow. The vine is grown across southern Vietnam — Châu Đốc, Hà Tiên, Phú Quốc, Bà Rịa, Quảng Trị — and around Vĩnh Linh further north. For white pepper the berries are picked fully ripe, soaked in running water for three or four days, trodden to strip the darkened skin, then dried. The ivory-grey corns carry less aroma than black pepper, the oil-bearing skin having gone, but more heat.
