White Turmeric
Curcuma aromatica
White turmeric (Curcuma aromatica) is a shade-loving herb of the ginger family, 20-60 cm tall and occasionally reaching a metre, with broad lance-shaped leaves 30-60 cm long, smooth above and silky beneath, and a stout rhizome throwing out jointed cylindrical tubers that are yellow inside. It grows under light tree cover, is cultivated in many parts of Vietnam, often in household gardens, and also occurs in India, China and Cambodia. The rhizome is lifted in autumn or winter, its rootlets stripped away, then washed, soaked, softened, sliced thin and dried. It holds a viscous yellowish-white oil smelling of camphor, and a bitter soft resin.
