Black Garlic

Allium sativum

Black garlic is made from the bulb of the garlic plant, Allium sativum, a member of the onion family and a Vietnamese kitchen staple. The part used is the bulb, the head of cloves that forms below ground. Garlic's familiar smell is not there in the clove at rest: the tissue holds an odourless amino acid, alliin, and an enzyme, alliinase, and when a clove is cut or crushed the two meet and form allicin, which carries the taste and smell known as garlic. The bulb also yields a little essential oil, some 60 to 200 grams from a hundred kilos.
